The most special part of cooking at The Ritz-Carlton: “Our mission in our restaurants is to offer dishes and specialties that the guest cannot find anywhere else in a similar range. That's why we maintain very close contact with our suppliers, who produce incredibly high-quality, local products, from the local mushrooms — they grow in an old wine cellar in the second district — to our farmers and meat suppliers, who can tell you the name of the animals and their full pedigree.”
